Strawberry Cream Cheese Bites

a diabetic-friendly recipe


I cup strawberries (fresh or thawed), rinsed, stems removed, and halved.

8 ounces cream cheese, room temperature

6 ounces butter, room temperature

1/4 cup sugar-free powdered sugar

1 teaspoon vanilla


Line a baking sheet with parchment paper.

Place all ingredients in a food processor or blender.  Process until well combined and smooth.

Scoop mixture with a small cookie scoop and place balls onto the prepared baking sheet.

Freeze about an hour or until firm.  Serve frozen.

Makes 12 servings
