I hope all the dad's, grandpa's, great grandpa's and soon to be dad's had a great Fathers Day.

Wow, where has this year gone to?  Here it is July!!!  It is so nice to see that towns are having activities this year after last year of not being able to have them, along with county fairs.  Please get out and celebrate with them.

If you are like me I have extra rhubarb and don't what to do with it.  Well here is a recipe to use some of it.

Rhubarb Coffee Cake

1 1/4 cup brown sugar

3/4 cup oil

1 egg

1 cup  buttermilk 

1 teaspoon salt

1 teaspoon soda

2 1/2 cups flour

1/2 teaspoon cinnamon

1 1/2 cups rhubarb

Mix brown sugar, oil, egg and beat well.  Add other ingredients except rhubarb.  Blend well, stir in rhubarb.  Pour into a 9 x 13 pan.

Topping:  1/2 cup sugar and 1 teaspoon cinnamon.  sprinkle over cake and bake at 350 degrees for 45 minutes.
