I hope everyone had a great Easter!  April has been up and down with the weather, one day it's nice and the next day we're back to winter weather!

Congratulations to all the graduates.  I remember my kids' graduation along with my graduation.  All the preparation we had to do.  Getting the food order and making mints.  I remember helping my mom make mints for my graduation and my kids.

Here is my mint recipe:

2 lbs. powdered sugar

1 8 oz. package cream cheese softened

Mint to taste

Food coloring

Combine until well mixed.  If it gets too warm, put it in the refrigerator for a few minutes.  Make into a small ball, roll in sugar and press into the mold.  You can make these ahead of time and freeze it.
